The second vintage or our Tom Logan Pinot Gris is demonstrating the evolution of the young vines with soil influence showing a defining minerality in the wine. The complexity of this wine lies in its precision with layers opening up as it sits in the glass. The grapes were handpicked and left to soak overnight in the press. Once settling was complete a portion of the juice was racked to a stainless steel tank with the balance to three neutral French oak barrels for fermentation which was achieved using different yeasts to aid in the complexity. Both components had extended lees contact to enhance the texture and mouth-feel. The wine under went light fining before being cold and protein stabilised prior to sterile filtration and bottling in August 2010.
Notes of dried apple, poached pear and orange blossom on the nose lead to a round mid-palate that is accentuated by fresh orchard fruit flavours and a persistent minerality. The wine has a rich texture with a lingering finish that is balanced by zesty acidity and judicious alcohol. This Pinot Gris is very versatile for food matching and is equally pleasing served nicely chilled on a summer’s day or in a big glass by a warm winter’s fire.
