The six picking bins of Pinot Noir grapes for the 2010 Rose were selected from three parts of our vineyard in order to achieve an optimal balance of fruit and acidity in the wine. The grapes were handpicked and then “foot stomped” the traditional French way twice daily over a period of 72 hours before being whole bunch pressed to a settling tank. Once settling was complete the juice was racked to a stainless steel tank and to one neutral French oak barrel for fermentation which lasted about four weeks. The wine under went light fining before being cold and protein stabilised prior to sterile filtration and bottling in September 2010.
The wine has a beautiful pink hue with cups full of raspberries and strawberries on the nose. The palette shows classic Summer Dreaming flavours of strawberries and cream with floral undertones and red currant and orange zest on the finish. The fresh flavours and balance of this wine make it a fabulous aperitif in summer and it also pairs nicely with salads, salmon and berry desserts.
