Grapes from the three varieties were handpicked and destemmed into a 2.5 tonnes fermenter with 10% kept as whole cluster. The must underwent an 8 day cold soak to aid colour and flavour extraction prior to fermentation. Fermentation lasted twenty days after which time the grapes were pressed and the wine was left to settle overnight before being racked to American and French oak barriques. The wine was inoculated for malolactic fermentation and when complete was racked and left to age in oak until bottling in early March 2010.
The Cabernet Sauvignon shines though on this wine with hints of blackberry and casis with a smooth, round finish. It is easy drinking, yet with a richness that and will pair nicely with Sunday roast as well as burgers and pizza.
