2-10 years
Hand-harvested grapes were whole bunch pressed with 15% of the free-run juice going directly to barrel. The remaining 85% of the juice was cold settled overnight before being racked with light lees to French oak barrels (15% of which were new). The wine was fermented using both commercial and indigenous yeasts and was stirred weekly, undergoing complete malolactic fermentation. After 11 months, this chardonnay was racked out of barrel, sterile filtered. The resulting wine was bottled on 01/03/2010.
The nose is of grapefruit, lychee and golden wheat, followed by a palate full of pineapple, honey and lemon-drops. Lees stirring has given the wine great texture whilst the acidity gives a precise and lingering finish.
