Hand-harvested grapes were whole bunch pressed and the juice was cold settled overnight before being racked with light lees a small stainless steel tank. The wine was stirred weekly, undergoing partial malolactic fermentation. This chardonnay was then lightly fined and sterile filtered before bottling on the 15th September 2009.
This un-oaked wine was designed to be crisp and refreshing with subtle layers of complexity. On the nose there are hints of orange blossom, mango and butterscotch. The palate delivers flavours of juicy melon, a nutty spice and a lime-zest finish. Enjoy chilled on its own or with summer salads and fresh seafood.
