Cellaring Table

View the cellaring table to see Olssens recommendations for cellaring of each wine. These recommendations are based on good cellaring conditions which assumes a situation that is dark, free of vibration and a constant temperature of between 12 to 20 degrees celsius.

A = more than 4 years.
B = 2 to 4 years.
C = 1 to 2 years.
D = drink now to within a year.
x = wine not made.
Nr = wine either not yet bottled or released.

The vertical tasting held in March 2004 was a wonderful experience that showed some significant things.

  1. Generally all of the wines had carried their age very well.
  2. The Slapjack Creek Pinots were all simply superb.
  3. The Gewurztraminer were brilliant across the whole range and had lots of life left in them.
  4. The Sauvignon blanc were variable and the only bottle of 1999 available was corked!

    The En Primeur functions held in September 2006 showed that the Slapjack Creek's are all holding up very well as too generally were the Pinot Noir and Jackson Barry, although the 1997 Pinot Noir is past its best and should be drunk now if you have any in your cellar.
