  Winemakers notes
Chardonnay grapes were hand harvested on verasion and whole bunch pressed to produce a zingy, slightly sweet juice. The juice was then stabilised and filtered prior to bottling on 12 March 2003.

 
  Wine description
The juice of unripe grapes and full of honied lemon and limes, this verjuice is a subtle alternative to vinegar or lemon juice in cooking and is wonderful in marinades, dressings or sauces, or as a drinks mixer.

Suggested uses
· Replace wine or vinegar in marinades or salad dressings
· Drizzle over green salad, avocado or roast tomatoes
· De-glaze sauteed seafood, chicken or meat
· Poach fresh fruit such as pears, quinces or peaches in it
· Reduce to make a syrup to serve with desserts
· Add as a mixer in drinks – great in Gin & Tonic @ 1/3, 1/3, 1/3
