  Winemakers notes
Sauvignon Blanc grapes were handpicked and then whole bunch pressed. Following pressing 15% of the juice was drained to neutral French oak and inoculated with yeast while the remaining portion was cold settle in tank before being racked and inoculated. Tank fermentation lasted several weeks with temperatures being maintained at less than 14 degrees to retain optimum flavour. The barrel portion fermented at 20 degrees and on completion of fermentation was lees stirred weekly over a period of 2 months to increase mouth feel and complexity. The 2 portions were then sulphured, racked and blended. The wine under went light fining before cold and protein stabilised prior to sterile filtration and bottling on 15th September 2009.

 
  Wine description
Kiwi fruit, capsicum and hints of gooseberry on the nose lead into a palate displaying juicy lime, passion fruit and hints of feijoa. The wine has a powerful, refreshing finish that evolves in the glass. Enjoy as a refreshing drink on its own or pair with fresh goat's cheese, shellfish or simply prepared summer salads.
