notes This 2009 Nipple Hill is a genuine reflection of our vineyard including blending components from the majority of our parcels. The predominant clones are 10x5 and 5. All but one of the ferments included between 8%-30% whole cluster. Typically, each ferment underwent a five day cold soak to aid colour and flavour extraction prior to fermentation. After a fermentation of around nine days the wine was left on skins for a further two days to achieve tannin integration. Fifty-seven percent of the blend was aged for 5 months in older French oak to give the wine structure while the rest of the blend was aged in a stainless steel tank to help preserve the fresh fruity character. The blended wine was lightly filtered prior to bottling on 30th November 2009. |
