notes The nose abounds with sweet fruit and spice, a wine full of cherry and plum flavours partnered with fine tannins and plenty of body. Each part of the vineyard was hand-harvested at the optimal degree of ripeness which is derived from vine-age and clonal diversity. The individual clones were handled separately in order to enhance the blending potential. All vats underwent a five day cold soak to aid colour and flavour extraction prior to fermentation. After a fermentation of around seven days the wine was left on skins for a further seven days until optimum tannin integration was reached. The wine was then gently pressed off skins and racked to French barrels. The wine then underwent malolactic fermentation and was left to mature for nine months before being racked from barrel, blended and lightly fined and filtered. The resulting wine was bottled on 25/02/2009 . |
