| Matt Connell - Winemakers comments Gewürztraminer grapes were handpicked and then whole bunch pressed after a period of skin contact in the press. Following pressing the juice was drained to tank to cold settle. Once settling was complete the juice was the juice was racked to tank with 15% being put into neutral oak. Tank fermentation lasted several weeks with temperatures being maintained at less than 14 degrees to retain optimum flavour. Barrel fermentation occurred at temperatures up to 20 degrees in an effort to build richness and weight on the mid palate. Once fermentation was complete the two portions were then sulphured, racked and blended. The wine under went light fining before being cold and protein stabilised prior to sterile filtration and bottled in September 2008. |
| Wine
description Rose petal, Lychee and spice aromatics dominate the nose. The aromatics flow into the mid palate and are supported by a lovely almost "oily" texture. The wine is long in the mouth and finishes with lingering spice and balanced acidity. |
